Why do this?
The dark and light theme can be great depending on time of day or personal preference. The dark theme for example is great for night use as it does not pressure your eyes as much with the dark background.

How to Switch themes on Instagram between Dark and Light theme?
So do the following to switch themes
1.Go ahead and make sure your phone and the Instagram app is updated to the latest version.
2.Start up Instagram.
3.Go to your profile.
4.Click the three lines upper right and go to settings.
5.Click theme and you can easily choose Dark or Light theme. If you want it to Automatically change choose system default and if you phone changes theme based on time of day Instagram will do the same.
